This noodle salad is low in carbs and calories, but full on with flavours! Its the perfect dish for hot summer days as it cools and refreshes you. Tangy with sweet and spicy, it is a satisfying dish on its own, or can be served as a starter. Feel free to add your favourite meats to the dish, eg. chicken, fish, shrimps, pork or beef.

Ingredients

200g The Konjac Shop Shirataki Noodles
80g cherry tomatoes
40g bean sprouts
30g spring onion
60g cucumber
1 medium lime
1/2 chilli

2 tablespoons erythritol
10g coriander
1 tablespoon MCT oil
SMIQQL flaky salts to taste
1 teaspoon toasted white sesame seeds
Directions
Cook the shirataki noodles in boiling water for 2 minutes. Drain and set aside.
Cut the cherry tomatoes into quarters .
Dice the cucumbers.
Chop the chilli.
Chop the coriander.
Prepare the sauce by squeezing the lime and adding the erythritol to it. Mix well.
Add the cherry tomatoes, cucumber, spring onions, bean sprouts, chilli and coriander to the shirataki noodles.
Sprinkle the toasted sesame seeds and flaky salts to the mixture.
Drizzle with MCT oil.
Toss and mix well.
Let the dish sit and soak in the sauces for 15 - 20 minutes.
Serve and enjoy!
