The Risotto Milanese is a classes Italian dish made with Arborio rice, beef stock, saffron, onions, butter, white wine, and Parmesan cheese. In our Keto version, we substitute the rice with a reduced carb wheat-free orzo rice pasta.
This dish is suitable for the family. It is easy and quick to prepare with minimal ingredients.

Ingredients

100g Heart Reduced-Carb Wheat Free Orzo Rice Pasta
300g beef stock
20g onions
35g butter
50ml dry white wine
50g Parmesan cheese
6 - 8 strands saffron thread
2 tablespoons olive oil
1 sprig of parsley for garnishing
salt and pepper to taste
Directions
Boil the orzo rice pasta in the beef stock until soft.
Brown the onions in olive oil.
Drain the orzo rice pasta and set the broth aside. You can drink the broth separately.
Add the orzo rice pasta to the pan with the browned onions.
Add the saffron threads and dry white wine and mix well.
Add the butter and mix through till its all melted.
Add the Parmesan cheese and mix well.
Serve with a parsley garnish (optional).
