Moussaka is an eggplant or potato-based dish, often including ground meat. In our low carb recipe we have replaced the eggplants and potato with Heart Low-Carb Tufoli Pasta.
This dish is suitable for the family and especially wonderful when you are seeking the warmth of comfort food. Leftovers can be refrigerated and reheated to enjoy. The dish will taste just as good.

Ingredients

200g Heart Low-Carb Tufoli Pasta
1 litre of salted water
2 tablespoons of lard, tallow or ghee
100g carrots
100g zucchini
250g minced beef
250ml water
Salt and pepper to taste
2 sprigs of fresh thyme
2 eggs
100ml cooking cream
100g parmesan cheese

Directions
Heat the lard, tallow or ghee in a heavy bottomed sauce / frying pan with lid.
Dice the carrots and sauté for 5 minutes.
Add the ground beef and sauté for 5 minutes.
Add salt and pepper to taste.
Grate the zucchinni and add to the mixture and sauté for another 5 minutes.
Add thyme.
Pour in the water and bring to boil. Simmer for 30 minutes.
Prepare the creams sauce by whisking the eggs.
Add the cooking cream to the whisked eggs and mix well.
While the sauce is simmering, boil the water for the pasta and add a generous amount of salt.
Cook pasta in the boiling water for 12-15 minutes. Adjust the cooking time according to how soft you like your pasta.
Drain the pasta and add to the meat sauce. Stir well.
Prepare the cream sauce by whisking the eggs.
Pour in the cooking cream and mix well with the eggs.
Add the grated parmesan cheese into the cream sauce.
Pour the cream sauce over the pasta and meat sauce and mix reasonably well. Do not overmix.
Pop the whole pan into a pre-heated oven at 180 degrees celsius, fan-forced and heating element on the top activated.
Let the dish gratinate for 12 minutes.
Serve with a few sprinkling of fresh thyme.

1. If you would like to reduce the net carbs of this dish, you can omit the carrots.
2. You can use other types of minced meat, eg. lamb, pork.
3. To make a vegetarian version of this dish, omit the meat and increase the vegetables.
